National Cookery Competition

The Royal Rajasthan Chef Society recently organized a National Cookery Competition in Udaipur, showcasing the culinary talents of chefs from across Rajasthan. The event celebrated extinct dishes and grandmother's recipes, reimagined in contemporary styles. The theme, "Kahin Gum Na Ho Jaye," emphasized "Our Heritage, Our Cuisine."

Participants were tasked with preparing one sweet and one savory dish, presented in traditional styles. The program included a special discussion on canned and ready-to-eat foods. Notable presentations included Chef Sanjay Agarwal from Delhi, who introduced millet soda; Dr. Chef Sangeeta and Chef Devendra, who showcased Bokanaya; and Chef Vimal and Chef Himmat Singh, who created an exquisite display featuring drumstick flowers.

Competitors prepared a variety of traditional Rajasthani dishes, including Kachri chutney, Sattu, Corn Gulab Jamun, Water Chef Vegetable, Battisi Laddu, Cashew Dahi Bada, Kair Sangri, and Muthia. Each dish was beautifully presented using Indian decorations such as earthen pots and brass utensils.

According to Rajasthan coordinator Dr. Sangeeta Dhar and Chef Vimal Dhar, President of the Royal Rajasthan Chef Society, the competition attracted 35 home cooks, along with students from 12 hotel management institutes and 11 schools across the region. A panel of judges from Delhi, Jaipur, and Udaipur evaluated the participants' creations. The chief guests included Mr. Lakshyaraj Singh Mewar, Executive Director, HRH Group of Hotels, along with Dr. Arun Gupta and Dr. Riddhima Khamesara.

This competition not only highlighted the rich culinary heritage of Rajasthan but also fostered creativity and innovation among chefs and aspiring cooks alike.
